Locomotive Cake Tin
What is there to do when your little one looks you sweetly in the eye, chocolate no doubt smeared all over their cute dimpled face, and says "Mummy, I want a cake shaped like a choo choo train". Most parents would be straight down the bakery handing over their hard earned cash (if indeed they could find one with enough creative bent to produce a train), but not you, you want to make that cake extra special with your personal touch! If you love making cakes like we love making cakes you'll be scouring the web for that perfect cake tin - which is a spot of luck as we just happen to have it! The Locomotive Cake Tin will make you the toast of your train-mad child's next birthday party. The cake we made here (a gorgeous carrot cake - see the recipe below) was not only our first go with the tin, but the first cake our Creative Director had made in ten years. Just remember - when you're a kid you never need a reason to bake a cake, so make sure you spoil yours now and again.
Carrot Cake to absolutely die for:Ingredients:
- 300g plain flour
- 2 tsp Bicarbonate of Soda
- 2 tsp Baking Powder
- 2 tsp cinnamon powder
- 300g caster sugar
- 500g grated carrots
- 100g shelled walnuts, finely chopped
- 75-100g sultanas
- 300ml corn oil
- 4 eggs, beaten
- 2 tsp vanilla essence
Method:
- 1. Preheat the oven to 180C/gas 4. Grease your locomotive cake tin.
- 2. Sieve the flour, bicarbonate of soda, baking powder and cinnamon powder into a mixing bowl. Stir in the caster sugar, carrots and walnuts/sultanas.
- 3. Pour in the corn oil, and add the eggs and vanilla essence. Stir to mix, and then beat for one minute until everything is combined.
- 4. Pour the cake batter into the prepared tin and bake in the centre of an oven for about 35-40 minutes, or until risen and firm to the touch. Remove the cake from the oven and tip onto a wire tray. Try not to eat it all before the kids get home.
